How do you guys learn to use Nifscope? Did you follow a tutorial or something?

I just started fiddling with it and asked the nearest NifSkope monkey (Melchior Dahrk, in my case) a question or two. It's not as intricate as stuff like Blender.

What are you wanting to do?

I want to know how to retexture existing assets and create objects made of other objects, kind of like how you did with the things you made.

Retexturing is easy. Make sure you have your block list opened, then click on the arrow to the left of any NiTriShape. You should see something called NiTexturingProperty. Open that up by hitting the arrow to the left of it, you'll see "NiSourceTexture". Click on the thing that looks like a purple flower to select a different texture. When you save your work, do it under a unique name, in case you screw up.

For other things, I have a tutorial around here somewhere. Should get you started, at least.

Thank you for the information Autoclock. I did came across something worrying though: when I tried opening the spider all it just shows a white textured version of it.

Go to Render, then Settings. Pick the Rendering tab, that's where you can set up the file paths for textures.
